amish baked oatmeal

Jamie, our pastor’s wife in Virginia, shared this breakfast casserole with me.  My family loves it!  I use olive oil and brown sugar for the first two ingredients.  I also often reduce the sugar amount by almost half and add in a diced up apple.  The kids like it this way best.  It’s so easy to double and feed my family for a few mornings!

  2. I’m making this for the 2nd morning in a row! This time I doubled the recipe. We devoured the one that you gave us, so I’m hoping for leftovers today. I like your recipe better than mine, so I’ll be switching. Thanks for sharing!!

  3. BTW, my oatmeal pancake recipe is:

    7 cups quick oats (important to use quick; rolled oats won’t absorb the milk)
    7 cups milk (I use dry milk – it’s cheaper!)
    1/3 cup oil
    salt, opt.

    combine, mix, and let soak 6-8 hours or overnight. cook like regular pancakes on a griddle. serve with honey, jam, syrup, peanut butter, or plain. 🙂
