6 chicken breasts
2 limes juiced (or equivalent of Fresh Lime)
2c chopped cilantro
30oz frozen corn
4 garlic cloves, minced
1 red onion, diced
30oz black beans, rinsed
salt and pepper
Cook on LOW for 8 hours. Slice chicken and serve on tortillas with guacamole and cheese.
I usually make this with tortellini so they are more bite-sized.
A good basic chili recipe for the slow cooker. Lived off this when I was pregnant with my first… cup o’ chili in the mornin’, cup o’ chili at the noontime, cup o’ chili before bed. Seriously.
Why not add a ton of colorful veggies to your chili? I also like to add a can of chickpeas to my chili for more color and variety.
You don’t have to add the radishes but they are a fun surprise addition to the normal black beans and rice.
