6 chicken breasts
2 limes juiced (or equivalent of Fresh Lime)
2c chopped cilantro
30oz frozen corn
4 garlic cloves, minced
1 red onion, diced
30oz black beans, rinsed
salt and pepper
Cook on LOW for 8 hours. Slice chicken and serve on tortillas with guacamole and cheese.
I usually make this with tortellini so they are more bite-sized.
A good basic chili recipe for the slow cooker. Lived off this when I was pregnant with my first… cup o’ chili in the mornin’, cup o’ chili at the noontime, cup o’ chili before bed. Seriously.
You don’t have to add the radishes but they are a fun surprise addition to the normal black beans and rice.
My friend Heather gave me this salsa recipe, and I could eat an entire bowl it’s so good. Our adoption story began even earlier than we could have expected after watching her family grow to nine kiddos!
