1 /12# beef cubes
3 carrots, chopped
4 ribs celery, chopped
1 1/2 c onion, chopped
15oz can diced tomatoes
1/3c minute tapioca
1/2t Italian seasoning
Combine everything in the crockpot. Cover and cook on low 8-10 hours. Serve over brown rice if desired.
I typically use Thanksgiving leftovers to make this since the turkey, mashed potatoes and gravy are already made!
This is my go-to spaghetti sauce recipe. Much cheaper than store-bought sauce, not filled with corn syrup or sugar, and has TONS of veggies incorporated! I make a giant pot, then divide into freezer bags in 26oz servings so each is like a store-bought jar for recipes.
I always use all ground beef in place of the ground pork… pork always seems so fatty and gross. 🙂 Otherwise, this is a yummy way to get a ton of veggies added into a dish that resembles the usual spaghetti and meat sauce.
Another great winter soup that’s freezable. Double (or triple!) it and enjoy it again in a few weeks.
