I love doubling these so we can enjoy them a few mornings in a week. I usually don’t add the chocolate chips and they are still a little sweet from the brown sugar. Speaking of, I sub brown for white sugar and often use canola oil for melted butter.
Jamie, our pastor’s wife in Virginia, shared this breakfast casserole with me. My family loves it! I use olive oil and brown sugar for the first two ingredients. I also often reduce the sugar amount by almost half and add in a diced up apple. The kids like it this way best. It’s so easy to double and feed my family for a few mornings!
