I usually make this with tortellini so they are more bite-sized.
These are a little more work than I like to put into most dinners, but it’s really worth it. I use tortilla chips that are getting stale because baking them crisps them back up nicely. Southern Living
I just found this recipe and it’s going to be a new one on my list of freezer meals. It is really good served over brown rice but not necessary.
My own version uses 1t salt and lots and lots of cilantro. It’s a little different every time, but this is by far my favorite salsa.
My friend Heather gave me this salsa recipe, and I could eat an entire bowl it’s so good. Our adoption story began even earlier than we could have expected after watching her family grow to nine kiddos! I still laugh remembering her telling us, “We don’t homeschool or bake our own bread!” They have a beautiful family!
