My southern friend Amee made this for a party at our husbands’ work and I think I could have eaten the entire bowl.  She serves the chicken and asparagus mixture over brown rice instead of as a cold salad.

My man’s family calls these goobers, but they are much like buckeye balls in a bar form.  He requests them every year for his birthday, and that’s the only time I will make them because they aren’t exactly the healthiest food to enter my mouth!  Anything for my man on his special day, though.
