Thank you again to my southern girl friend Mandy for this! I try to healthy it up a bit by using extra broccoli, light sour cream and wheat crackers for the topping. It’s also easy to double into a 9×13 pan to serve guests.
My friend Beth, who welcomed me to MOPS in Virginia and then passed on the torch of helping lead the following year, gave me this recipe. It’s one of my favorites for crockpot cooking on Sundays, so lunch is ready when we get home.
